This is an easy way to use up small amounts of leftover chicken, and no one fights over white or dark meat! Just wrap leftover chicken in wonton wrappers and bake until crispy. You can serve them plain or with soy sauce or sweet chilli sauce. You can buy wonton wrappers at Chinese and Asian supermarkets.

This is the Filipino version of spring rolls. You can find lumpia wrappers in Asian supermarkets wherever they keep their frozen food.

These Oriental-style, triangular parcels of crisp, light filo pastry enclose a ginger-flavoured filling of crab, water chestnuts and sweetcorn. They look and taste wonderful, and are really easy to make. Prepare them ahead for a party, then bake just before serving with a sweet chilli dipping sauce.

You can buy the rice paper spring roll wrappers in Asian shops. These rolls are not fried and taste best dipped in the hoisin peanut sauce. Delicious for a summer party.

Oven-baked crisps are not only healthier than those that are fried, their flavour is fresher and more concentrated too. Here, thin slices of beetroot and potato are baked in a hot oven to make dippers for a spicy South-east Asian mixture. If possible, slice the vegetables with a mandolin to ensure they are all an even thickness.
