Based on the classic leek and potato soup, this version has asparagus and sugarsnap peas added, and it is enriched with yogurt rather than cream for a lighter, lower-fat result. Traditionally served chilled, the soup can also be served hot, so it is ideal for days when the weather is changeable.

Delicious springtime soup. The crab is optional but I think it makes the soup so great. You can substitute prawns for the crab, if you'd like.

Velvety asparagus soup, lovely green colour, great with crunchy rolls. My friend gave me this recipe, it originally used chicken stock. When my daughter became vegetarian, I modified it with vegetable stock instead! It also doubles easily. This soup will tempt even asparagus haters!

When our children were little my friend gave me this recipe which hides vegetables in the sauce; my children still love it as teenagers. It freezes very well so I am never without a quick meal to hand. It can be used on its own over pasta or with the addition of single cream makes a luxurious soup. A vegetarian version can be made without the bacon.

You can use fresh, raw, or cooked bones to make a meat stock, plus any lean meat scraps. Trim any fat or fatty skin from meat or bones before using for the stock.

I will admit that I like thick soup. This recipe is based on one that I found in a lovely tapas book and tweaked a little. If you do not have sweet potatoes handy then just use ordinary potatoes. Also, you can add 2 cloves of garlic if you are so inclined and just use water rather than veg stock in the soup.

A luscious soup packed with vibrant vegetables. The beetroot provides the vivid fuchsia colour and the carrots, fennel, celery and orange all contribute to the superb flavour. It's also good served chilled.
