This a my family's favourite recipe. We used this sate recipe for Barbeque in the summer and we also like it as a starter to a meal in the winter. The flavour is exceptionally good when cook on a Barbeque. It is equally good when the sate are cook under a grill.

Dried apricots moistened with orange juice, then wrapped in smoked turkey rashers make a tasty snack to pass round with drinks, as well as an interesting garnish for a festive roast chicken or turkey. Take care when grilling turkey rashers – they cook more quickly than bacon and, because they contain no fat, will dry out if overcooked.

This coarse-textured pâté, deliciously flavoured with garlic and fresh coriander, combines minced turkey and turkey livers with lentils for a starter that has considerably less fat than a traditional pâté. Serve with toasted slices of brioche or other bread, plus some crisp vegetable sticks and crunchy radishes.
