This delicious stew is inspired by my friend from Sierra Leone who often cooks for her family. Many ingredients can be modified. This is kind of a 'whatever is on hand' recipe. You can use a whole chicken cut into bite-sized pieces, or just breasts and thighs if you prefer. Other suggested additions are turnips, carrots and celery. This looks great served over white rice with a garnish of fresh chopped coriander, parsley or unsalted peanuts.

I made this up one day. It takes a lot of work, but makes a lot of stew, and the leftovers just taste better and better each time you try it.

Warm up on a winter evening with a nourishing beef stew, made extra-satisfying with low-fat, herb dumplings. Try serving with steamed broccoli, or a leafy vegetable such as spring greens or cabbage.

This gorgeous Greek casserole with beef and onions is perfect winter comfort food. Serve with lots of crusty bread to mop up the aromatic sauce. It is also typically made with rabbit, so feel free to substitute this if you wish.

The meat can be omitted without compromising the dish. Serve hot with crusty bread and a nice spinach salad.

Pueblo Indian tradition calls for the addition of corn or potatoes to this dish. Serve with a big green salad and a pile of warm tortillas. It also makes a wonderful filling for enchiladas.

In the galley, one-pot meals are simple and safe - especially when made in a pressure cooker. This is a brilliant solution when you've dropped anchor and are surrounded by friendly boaties just waiting for a newcomer to go visit ... and the aroma from your galley will have them rowing across in no time! Be diligent about shaking the pot, as below, to prevent sticking. Ingredients aren't always easy to come by in out-of-the-way sailing spots, so do this with whatever meat you can!

This is a nice winter stew or soup that everyone loves in my family. It is so comforting on a cold winter night, or it can be a Christmas main for vegetarians. It tastes wonderful the next day! Experiment with the vegetable combinations!

Chicken thighs are excellent in a casserole, being very tender and full of flavour. Fresh apricots and a bulb of fennel make good partners, especially when spiced up with cumin.
