The Parmesan is optional but I think it adds a needed finishing touch to the dish. You can substitute cauliflower for the red cabbage. Either way, this recipe is bursting with colour and flavour.

This is a nice winter stew or soup that everyone loves in my family. It is so comforting on a cold winter night, or it can be a Christmas main for vegetarians. It tastes wonderful the next day! Experiment with the vegetable combinations!

This delicious vegetarian stew is hearty in texture but rather delicate in flavour. Fresh or frozen garden peas may be used.

This is a very easy and warming stew that is perfect for the slow cooker. Easily tweaked according to your own taste and preferences. You can omit the salmon and have it as a vegetarian meal and adjust the amount of pepper depending on how hot you like it. I put this on in the morning before leaving for work and come home 9 hours later to a yummy dish! Serve with crusty bread or Jamaican sweet bread for extra authenticity.

This easy, one-pot dish of root vegetables and pinto beans makes a nourishing winter main course, and needs no accompaniments. It's particularly enjoyable with a glass of dry cider or apple juice.

Made this one up myself because all these ingredients needed to be used up in my kitchen.

Found this recipe when I was detoxing and now it's a regular on my dinner menus. This cassrole is packed with vitamins, minerals and long term energy. If not on a detox, serve with warm crusty bread. Enjoy!

Alter the chilli powder amount according to your preference. Peeling the squash is quite difficult, but I have found that a carrot peeler is the most useful tool for this job.

Pinto beans, black beans and chickpeas are simmered with sweetcorn, tomatoes and savoury spices. This recipe calls for dried beans, which will need to soak overnight. You could use tinned beans for a shortcut, if you prefer.

Good food does not have to be complicated or time-consuming. This simple, homely casserole is made without a lengthy shopping list of exotic fresh ingredients or hours of precise slicing and chopping. Raid the storecupboard and use everyday vegetables from the refrigerator for a warming and heart-healthy meal.
