Slowly braising whole baby vegetables preserves and enriches their flavours, and reducing the cooking juices in the final stages of cooking creates a delicious dressing that makes an attractive glaze. Using the cooking liquid in this way retains the water-soluble vitamins. These vegetables are perfect with roast poultry, game or meat.

This is a really simple brownie recipe. it has been tried and tested many a time and they certainly dont last very long in the cupboard. I always use chocolate chunks when i bake them however walnuts are just as good, it is just a family preference. these morish gooey chocolate treats are an all year all occasion must bake.

I was looking for a unique way to prepare broccoli and decided to give this a try! Florets are roasted after being tossed in olive oil and sprinkled with sea salt, freshly ground black pepper and minced garlic. A squeeze of lemon juice before serving seals the deal.

Beetroot was my sworn enemy until I tried it like this; it's a great way to use any root vegetables. I think the beetroot adds a beautiful red colour to the dish, but if it bothers you to serve pinkish vegetables, substitute parsnip, swede or any similar vegetable; be creative!

A simple & tasty side dish. You can use any type of potato for this. I've used both baking and boiling potatoes for this. Use what ever you like.

This comforting pudding is sure to become a family favourite, being perfect for a Sunday lunch on a chilly autumnal day. Pears and blackberries are topped with an orange-scented sponge mixture and baked, then the pudding is turned out upside-down to serve, so the luscious fruit is on top.

There are so many types of pesto available now; choose basil, sundried tomato, coriander or porcini pesto - depending on the main dish. By simply adding one tablespoon of pesto to boiled potatoes then mashing, it adds a delicious alternative with a hint of colour to the usual mash....and guess what.....the kids just love it too! You could also add some sundried tomatoes and top with a little grated Cheddar and black pepper.
