This main dish has a rich, smoky flavour and tastes great with lemon-scented rice. This dish makes up one part of of a Tex-Mex vegetarian buffet and is ideal for serving alongside green rice, salsa cruda, stir-fried vegetables, rich roast onions, and coriander and cabbage slaw (all of which can be found on this site).

Amazing onion rings
Suitably crunchy homemade fried onion rings. They take a bit of preparation but are certainly worth it.
Retro carrot salad
Very 1970's inspired, however incredibly easy and tasty salad of carrot, onion, tomato, parsley, lemon and olive oil. Perfect partnering to grilled or BBQ food with fries.
1 hour macaroni
Easy to make macaroni cheese, ready in about 1 hour. Mustard and lemon juice add a little kick, too.
Vegetarian black bean chilli
Black bean chilli over rice, with tortillas. Some chopped Cheddar cheese on the table is also nice to put in the wraps, as it melts from the heat of the chilli and adds a great flavour! Don't forget the tequila too!
Fresh potato salad
A delightful potato salad, served cold, that will be the hit of any lunchtime meal. The difference here is that the potatoes are cooked in brine.
