Ok...there's many ways to make an omelette but this one is a meal. Based on the Spanish tortilla it has potatoes as its main veg but then you can add what you want: in this case it's sweetcorn, courgette and green pepper. I often add chopped chilli or tabasco too.

Authentic Spanish tortilla (omelette)
This is very easy to make, it doesn't cost a fortune and most people have a couple of onions, potatoes and eggs spare. It's low on cost and high on taste. It's ideal to eat hot or cold and great to eat with a salad. Please note you will need a deep fat fryer, a frying pan and a dinner plate.

This is recipe reminds me of my mum when I was a child. I still continue to cook the same for my children and grandchildren. Although I have changed the method slightly (times have changed!), the recipe is the same and the end result is equally tasty and authentic. The omelette can be served hot or cold with a green salad. Will keep for 3 - 4 days in fridge or, once cold, wrap in foil and can be frozen for 1 month. Enjoy!
