This is a great Middle Eastern dish, simple to make and a real hit every time I make it (and amazingly cheap too!), is also good cold the next day for a lunch box.

Butternut squash, green beans and sweetcorn make a superb combination in this fast and tasty stew, based on a Native American dish. Serve with crusty bread.

A simple, hearty and tasty vegetarian dish. Good as a light main, side, or wrapped in a flour tortilla with cheese. I always make a double batch and freeze some.

Veggies, beans and cheese sandwiched in tortillas, then fried until golden on both sides. This is a great weeknight supper, ready in a flash - make one quesadilla per person. You can also cut them like a pizza and serve as a starter or party nibble.

This veggie burger is an alternative to eating its beefy cousin. It's high in fibre and actually tastes delicious.

An easy vegetarian pasta dish that's perfect for a quick weeknight supper. A hearty and delicious tomato, spinach and black bean sauce is served over whole wheat pasta. It's also great served with brown rice, and you can substitute tinned borlotti beans for the black beans.

The meat can be omitted without compromising the dish. Serve hot with crusty bread and a nice spinach salad.

Halved yellow and red peppers make bright containers for an ultra-easy stuffing of spicy rice and pinto beans, topped with crunchy nuts and well-flavoured cheese. All it needs is a crisp salad to accompany it. Delicious!

These nutritious vegetarian burgers are tasty enough to appeal to everyone. They hold their shape well yet remain wonderfully moist when grilled. A cherry tomato and basil salad is the perfect complement.

An excellent hearty and warming family meal. Can be mildly mouthwatering or hot as you dare. It can also be varied ever so slightly by trying different flavoured corn chips/tortilla chips. Try zingy lime or fragrant chilli varieties to suit your own tastes. I have seen chilli lasagna recipes before but always using pasta sheets which doesn't feel very Mexican to me. Serve with a crisp cooling salad dressed with mint, cucumber, yoghurt or soured cream.

This recipe is based on a traditional Caribbean favourite. It's made with black-eyed beans or red kidney beans, which are called peas in Jamaica – hence the name of the dish. Red pepper has been added for extra vegetable content and a small amount of lean, smoked bacon lifts the flavour.
