This salad is a kaleidoscope of colour and taste - black beans, sweetcorn, green peppers and tomatoes. Lime juice, garlic and green chilli give it some punch. It can also be used as a dip with tortilla crisps.

This is based on fattoush, the popular salad enjoyed in the Lebanon and Syria, and it makes a satisfying main dish. It's important to grill the pitta bread until it is really crisp and golden or it will quickly become soggy when mixed with the other ingredients. The dressing adds the distinctive flavours of olives, anchovy and garlic.

Lots of chopped fresh herbs give this quick and simple Middle Eastern salad its pronounced flavour, and bite-sized pieces of crisply grilled pitta bread provide texture. Serve for a light meal with a hint of summer at any time of the year.

Made from ewe's milk, Greek feta cheese has a good tangy, slightly salty flavour. Cow's milk feta produced in other countries has a milder taste. Either type can be used in this classic Mediterranean salad, with ripe tomatoes, olives, cucumber and chickpeas. Serve with pitta bread warmed under the grill.

Fajita seasoning makes this salad fiery. Add lots of lettuce, onions and tomatoes, and you have a Mexican-inspired salad. It's even better topped with grated cheese and tortilla crisps.

If you are a bean aficionado, you'll love this salad. There are butter beans, kidney beans, green beans and pinto beans, along with some crunchy celery and green pepper. This recipe calls for jarred pimentos but you can use jarred red peppers instead. A sweet vinaigrette is stirred in, and then it's chilled for a few hours to let the flavours mingle.

This recipe comes from my Italian grandmother. It was always one of my favourites. It's best if you chill it overnight.
