This a recipe I came up with after getting a few ideas from a friend. The combination of chipotle chillies and coriander really completes this dish.

A little spicy chorizo goes a long way and adds a fabulous flavour to this colourful rice and vegetable dish. Camargue red rice is especially nutritious, with a higher fibre content even than brown rice, and a wonderful nutty texture.

Cannelloni tubes are often filled with rich beef or veal mixtures, but this lighter version uses chicken with fresh vegetables to make a deliciously satisfying dish. The cannelloni can be stuffed and assembled early in the day, and left in the fridge until you are ready to bake them. Serve with crusty bread and a green salad.

Tostadas comes from the Spanish word for toasted – in Mexico it refers to flat, crisply toasted corn tortillas, topped with all sorts of savoury things. Chicken with beans and salad is a favourite. A base layer of a thick mixture – often refried beans, but here a spicy pepper and tomato mixture – keeps everything together.

This recipe was given to me by my mum, but I've tweaked it a bit. It's an old family favourite and a great soup for an autumn day. Made in a pressure cooker, it takes only 20 minutes for a full, hearty meal. This soup also freezes beautifully.
