This is a recipe I adapted from my grandmother's. This warm and comforting soup is easy to make and perfect for a Sunday evening with crusty ciabatta.

Cannellini beans, chicken stock and fresh spinach are used in this flavourful Italian soup. Serve garnished with grated Parmesan cheese.

An excellent hearty and warming family meal. Can be mildly mouthwatering or hot as you dare. It can also be varied ever so slightly by trying different flavoured corn chips/tortilla chips. Try zingy lime or fragrant chilli varieties to suit your own tastes. I have seen chilli lasagna recipes before but always using pasta sheets which doesn't feel very Mexican to me. Serve with a crisp cooling salad dressed with mint, cucumber, yoghurt or soured cream.

This spicy vegetarian sauce is best served with pasta (penne is ideal) and some grated Parmesan or Italian-style hard cheese or Gruyère. Keep cans of chopped tomatoes and chickpeas on hand to make it often!

This Italian-inspired bean and pasta soup is very filling and only needs a grating of Pecorino or Parmesan cheese and some crusty bread.

This recipe comes from my Italian grandmother. It was always one of my favourites. It's best if you chill it overnight.

An Italian classic, traditional semolina gnocchi is served with generous amounts of cheese and butter. This healthier but equally delicious version is made with just a little butter, cheese and olive oil and flavoured with cinnamon and sage. Served with lightly cooked spinach and peas, this makes a great family meal.

This soup is warming, filling and delicious. It tastes best when you use fresh vegetables and herbs. If you like, you can replace the kidney beans with cannellini beans.

Passed down from my mum from a friend of my dad's, the late Mark Lasey. They went round for a dinner after the pub one night and all he had was mushrooms, onions, minced beef, baked beans and pasta that could have gone together as a dish. The dish was a success and we have now perfected it as a favourite family dish and have named it Laseyona after my dad's dear friend.

Lentils add extra flavour and texture to this Italian-style mushroom risotto. Serve with roast or grilled vegetables, such as peppers and courgettes, or a mixed salad, for a satisfying lunch.

This is a traditional Ligurian dish that is usually made with potatoes, green beans and baby broad beans. Here, broccoli and courgettes boost the green vegetable content. The pesto sauce used to dress the pasta and vegetables is lighter than most, but still packs a wonderful flavoursome punch.

There are so many recipes for this traditional Italian mainstay, usually served as a meal. Here's another that is slightly different.

This classic Italian dish is intended to make the very most of young spring produce, freshly picked from the vegetable plot. With today's choice of vegetables in supermarkets, the selection can be varied for year-round meals, and the recipe can also be made as a ‘storecupboard supper’ with good-quality frozen vegetables.

Onions, mushrooms, garlic and courgette are sautéed and then cooked with lentils until tender. Great served over pasta on a cold evening - a perfect vegetarian winter warmer.

Here's a delicious snack to be enjoyed hot or cold – toasted slices of baguette topped with a creamy white bean purée flavoured with garlic and thyme, and finished with colourful slices of tomato and leaves of rocket.
