This is an Iranian (Persian) dish and i found the recipe in an old cookbook. It says there are Vegetarian versions so if anyone has one, please let me know!

This is based on fattoush, the popular salad enjoyed in the Lebanon and Syria, and it makes a satisfying main dish. It's important to grill the pitta bread until it is really crisp and golden or it will quickly become soggy when mixed with the other ingredients. I make this houmous all the time. It only takes a few minutes to prepare, and it's healthier than shop-bought without the oil. Increase or decrease the ingredients as desired, especially the chillies! Serve with tortilla crisps, pitta triangles or fresh vegetables. Add more of the reserved chickpea liquid for a smoother dip.

If you only have one recipe for this wonderful dip, this is it. Everything goes into the food processor - chickpeas, tahini, lemon juice, garlic, parsley and spring onion. Vary the flavour by adding a few chopped mint leaves, a little fresh ginger or dried chillies.
