This is a nutritious and delicious Mexican soup, called a 'caldo'. It is too dense to be a soup, and is almost a stew, except the liquid hasn't been thickened. The flavours are deep and rich.

Tempting Oriental steak bites, all dressed up for a party! Let these snacks-on-a-skewer kick off your next gathering. Prepare them ahead, so they're ready for grilling in an instant. They're lean enough to be heart-healthy!

You can use fresh, raw, or cooked bones to make a meat stock, plus any lean meat scraps. Trim any fat or fatty skin from meat or bones before using for the stock.

I started making this when I went full time at work, it's full of goodness and is ready when I get home. I can just dish it up and rest!

Here strips of tender steak are coated in an intensely flavoured mixture, then stir-fried and tossed with vegetables and buckwheat noodles to make an all-in-one supper dish. The Japanese ingredients – nori, wasabi, soba and dashi powder – are available from large supermarkets, health food shops and Oriental food stores.

This recipe is one of my favourites that represents "East meets West". Very easy to prepare, yet fancy enough for any dinner parties. It has a balanced nutritional value and is low calorie. Serve it with steamed rice and broccoli or your favourite green vegetable.

A very mild fresh mushroom soup. It's a very improvisable recipe; most of the quantities can be changed according to taste.

My mum's gran used to make this stew using the cheapest meat and the least ingredients possible. We still make it this simply today, and as an easy winter warmer, I love it!

A Scottish savoury beef jelly – ‘hough’ is Scots for shin – this is a delicious, nutritional dish. The beef is lean and packed with a wide range of nutrients, including valuable minerals, particularly iron and zinc.

The question of what to do with leftover roast beef has never been answered more deliciously or healthfully: pan-fry chunks of the Sunday roast with golden sweetcorn and nuggets of potato and carrot for a filling, family-pleasing supper.

Juicy fresh vegetables replace Yorkshire pudding as an accompaniment to the Sunday joint, giving a lighter touch. Try serving with Sweet Roasted Squash with Shallots or Roasted Vegetables with Horseradish Sauce (on this website).

Looking for a healthy steak? Here it is: a scrumptious sirloin, flash-cooked so it retains all its fabulous flavours and surrounded by plenty of fresh vegetables. Sirloin is among the leanest cuts of steak, yet is wonderfully succulent.

This Mexican fiesta-on-a-plate consists of strips of marinated steak, peppers and onions presented smoking-hot from the grill. It's a treat for the family, but also ideal party fare, so double or triple the recipe if you're entertaining a crowd.

I love to come home to the smell of home cooked food but as I'm the only one that cooks in our house this is a rarity. That's why I love my slow cooker and this hearty winter dish is a favourite for all the family. Thick gravy and tender slow cooked beef ideally served with mashed potatoes, cabbage and some nice crusty bread to mop up. Great to prepare all the vegetables the night before especially if slow cooking.

This cheering, main meal soup is sure to appeal to the heartiest of appetites. Lean pieces of beef are simmered slowly in a rich, spicy tomato and red pepper broth that's studded with golden sweetcorn and creamy butter beans. Serve with warm tortillas to complete the meal.

Samosas are traditionally deep-fried, but in this delicious version they are made with crunchy filo pastry, brushed with a little oil and baked. Serve with fruit chutney or yoghurt raita and a mixed salad for a casual, light lunch.

This is a really quick recipe for dressing up lean rump steak. A gutsy tomato sauce, boosted with anchovies and capers, is made in the same pan, and all that's needed is some crusty French bread and a side salad for a deliciously easy meal.

With pastrami (cured, smoked beef) and bagels, the inspiration for this thick, filling sandwich can only be New York City. But unlike the Big Apple's favourite snack, this version replaces the mayonnaise with herby, reduced-fat soft cheese and includes lean turkey. It is perfect for a tasty lunchtime bite.

There's a whole head of garlic in this recipe, but after slow roasting, it comes out of the oven tasting mild and sweet. The mashed roast garlic adds a sublime but subtle perfume to the sauce.
