An excellent hearty and warming family meal. Can be mildly mouthwatering or hot as you dare. It can also be varied ever so slightly by trying different flavoured corn chips/tortilla chips. Try zingy lime or fragrant chilli varieties to suit your own tastes. I have seen chilli lasagna recipes before but always using pasta sheets which doesn't feel very Mexican to me. Serve with a crisp cooling salad dressed with mint, cucumber, yoghurt or soured cream.

Flavoured with garlic, ginger and chilli, this tempting dish with thin and tender strips of lean beef and juicy prawns is a variation on the classic ‘Nasi Goreng’. It's perfect for a relaxed lunch as much of the dish can be prepared ahead.

Beef shank, leek, celery and turnip flavour this hearty broth from the Isle of Man (where I grew up!). Though traditionally served at a Manx wedding feast, it's great for any occasion.

Be sure and remove the coating before slicing this beef roast. You will be amazed at the juiciness and incredible flavour of the meat.

Beef is marinated in a mixture of lime juice and onion, seasoned with salt and pepper and grilled or barbecued. Serve with rice pilaf or pitta bread.
