This is a great dish for using up autumn apples. Bramley, Golden Delicious or Cox's Pippin apples work well.

Asparagus and prosciutto combine for a heavenly crepe main! I cheat with Sainsbury's fresh three cheese sauce, but you could make your own cheese sauce or even white sauce. this is a good recipe if you have any leftover asparagus.

This makes for a luxuriously rich vegetarian meal, prepared in only an hour thanks to a few shortcuts. Aubergine slices are dipped in egg and breadcrumbs, then baked instead of fried. The slices are layered with tomato pasta sauce, mozzarella and Parmesan.

'Tartine' is French for a slice of bread with a topping. Spread herbed goat cheese on crusty bread and toss together beetroot, avocado and greens for an usual, beautiful meal that combines warm with cool, bitter with sweet, and creamy with crisp.

Asparagus, bacon and goat cheese top this deliciously intriguing pizza. A great way to get kids to eat their asparagus!

A great dish as a light main with a green salad, or even as a starter. I have used loads of different cheeses with this and it's always good.

Brown rice, with its nutty taste, takes well to robust additions like wild mushrooms and sun-dried tomatoes. Add some well-flavoured vegetarian cheese too, and a little will go a long way.

This recipe uses less milk and no thickener whatsoever! Very cheesy, too! You can either serve it from the pot, or top with buttered breadcrumbs and put in a 180 / Gas 4 oven to brown for half an hour, but we like ours fine without.

Topped with salsa and soured cream, these quesadillas are always a hit. when I have extra time, I add chopped onion, black olives and green chillies to the beans.

This is a delicious and simple vegetarian pasta dish. Use your favourite blue cheese -- I always use Danish blue as I'm a lover of strong flavours. Use spinach fettucine if you like!

For a smart meal in the minimum of time, stuff turkey breasts with rich, creamy blue Brie and add a flavour kick of lively ginger and sweet apple. Serve with new potatoes and stir-fried cabbage with walnuts. Delicious!

Kasha, or buckwheat, is one the fastest grains to cook. It's a non-wheat grain that has a nutty texture and mildly aromatic flavour which goes very well with vegetables and a creamy cheese sauce.

A creamy but light filling transforms these nutty-flavoured pancakes, popular in Normandy and Brittany, into a great dish for relaxed entertainment.

Also called ‘kasha’, whole buckwheat grains give a pleasing chewy texture to this hearty vegetarian pilaf. Buckwheat is higher in protein than most grains, as well as providing B vitamins, minerals and fibre.

Calzone is a bit like an Italian version of a Cornish pasty, but with the tasty filling sealed inside pizza dough rather than pastry. This recipe combines diced chicken with olives, roasted peppers, fresh basil and mozzarella cheese to make an ideal snack for a packed lunch or picnic.

A cheesy, satisfying lunch or light supper - this is most probably the world's most sophisticated toastie! Use Brie if you don't have Camembert to hand.
