This makes for a luxuriously rich vegetarian meal, prepared in only an hour thanks to a few shortcuts. Aubergine slices are dipped in egg and breadcrumbs, then baked instead of fried. The slices are layered with tomato pasta sauce, mozzarella and Parmesan.

An excellent hearty and warming family meal. Can be mildly mouthwatering or hot as you dare. It can also be varied ever so slightly by trying different flavoured corn chips/tortilla chips. Try zingy lime or fragrant chilli varieties to suit your own tastes. I have seen chilli lasagna recipes before but always using pasta sheets which doesn't feel very Mexican to me. Serve with a crisp cooling salad dressed with mint, cucumber, yoghurt or soured cream.

A feast of colourful vegetables makes a superb topping for a pizza-style ciabatta. The bread soaks up the aromatic roasting juices so that it is deliciously moist with a crunchy crust. If you want to boost your vegetable intake even more, serve it with a leafy herb salad.

This is a delicious version of the classic with a little more kick! You can substitute the vinegar with lime or lemon juice. Serve with farfalle, or any other pasta shape.

This classic Italian dish makes a great accompaniment to meat dishes, particularly those with a rich sauce or gravy.

This is my favourite starter of all time I've only ever found it in one restaurant and couldn't find it on the net so I tried to replicate as much as possible A simple yet tasty dipping tomato sauce with a blob of melted mozzerella in the centre and some toasted ciabatta bread on the side to dip. Variations. Why not use your favourite tomato sauce instead of the one below. You could mix up the type of tosted bread used to suit your own personal taste.

These personal-sized pizzas are loaded with fresh tomato slices and topped up with two kinds of cheese, black olives and fresh herbs. A delicious way to welcome your guests.

A delicious cream sauce for a special occasion. I simply toss it with pasta. Toasted hazelnuts, walnuts or pine nuts are a nice addition sprinkled on top.

When I was living in Italy, I ate this as much as possible. It's so easy and so delicious. Perfect as a starter for entertaining or a simple lunch. Have some ciabatta bread and olive oil on the side for dipping.

This delectable version of the popular Italian dessert includes the traditional sponge biscuits soaked in coffee and liqueur for the base, but rather than a rich topping there is a light and creamy mixture of sweetened ricotta cheese and Greek-style yogurt. A sprinkling of grated dark chocolate is the finishing touch.

Freshly grated Parmesan, a bite of black pepper and just a hint of fresh rosemary, baked into crispy golden twists. Great to eat now or to serve to guests, and perfect to give as a gift.

This simple risotto is a perfect accompaniment to loads of mains - prawns, scallops, lamb chops. It also makes a nice first course. For something really special, add shaved truffles on top. This risotto doesn't reheat well, so prepare it just before serving.
