This is a crunchy, wonderfully satisfying salad that is fab with grilled chicken leftover from yesterday's barbecue. The dressing is sweet and sour, mingling brown sugar with soy sauce and rice vinegar. Fried rice noddles add the crunch.

This creamy yet light chicken salad is ideal for serving as a luncheon or cold buffet dish. Basing the dressing on low-fat Greek-style yogurt mixed with reduced-fat mayonnaise makes it lower in fat than many other creamy dressings while still keeping the richness. Don't be tempted to omit the stem ginger – its subtle flavour makes all the difference.

Fajita seasoning makes this salad fiery. Add lots of lettuce, onions and tomatoes, and you have a Mexican-inspired salad. It's even better topped with grated cheese and tortilla crisps.
