Rushed? Need an elegant main dish to serve for an important occasion, that doesn't take a lot of preparation or time? This is it. This dish is not only easy and quick, it looks beautiful when served as well. Perfect served with a wild rice blend.

This is my take on the classic Waldorf salad, using balsamic vinegar instead of mayonnaise.

Both beautiful in presentation and taste, this salad uses fresh berries in summer (strawberries, blueberries, raspberries or blackberries) and orange slices in winter. Anytime of year, this sophisticated salad will bring rave reviews.

Everyone seems to love this easy but unusual blend of fresh mango and garlic. The salsa can be used on fish as well! Be sure your mangos are ripe for best flavour.

Sweet mangoes sharpened with chilli make a luscious dressing for lean chicken breasts, cooked in minutes. Try serving with mixed salad leaves or Roasted Asparagus with Caramelised Shallot Dressing (on this website).

Looking for a meal that can be on the table in 30 minutes yet is elegant enough for a dinner party? This dish looks and tastes like it comes from a fine French bistro, but with far healthier ingredients.

Succulent chicken thighs roasted with figs and lemon slices makes for a satisfying and impressive Mediterranean-inspired meal. The slightly sweet and sour sauce is perfect to serve with rice, and helps to caramelise the figs and lemon. Easy, delicious and if you feel the sauce isn't enough it can easily be doubled.

An easy slow cooker chicken recipe that cooks on its own and tastes great - the meat just falls off the bone!

With tender smoked chicken, mixed rice and refreshing melon and pineapple, this salad is as satisfying as it is delicious. It doesn't have an oil-based dressing to pile on the calories – just freshly squeezed orange juice and the juices from the other fruits. This salad is best eaten on the day it is made.

Here is a modern, lighter version of the traditional Coronation chicken. The familiar curry flavours and vegetables are still present but they have a Southeast Asian flavour, with spicy Thai curry paste and juicy fresh mango pieces added. This is the perfect salad for a refreshing summer lunch, accompanied by toasted naan or pitta bread.
