Not for the weak at heart, this is a sweet chicken and fruit soup from Algeria. You must serve with a crusty baguette to soak up the sweet and tangy broth. Great for using up roast chicken leftovers.

This is considered the national dish of the Philippines. The combination of soy sauce, vinegar, garlic, ginger and peppercorns is delicious and actually preserves the chicken! My mother taught me how to cook this, using her variation from the original recipe.

My first recipe here :) I threw this together a couple of days ago, as I found some beautiful fresh Fennel and some stunning fresh chicken legs. The idea was to mix my mothers stunning recipe for Spanish garlic chicken with the fresh fennel and give that a little Italian twist.

This is a Persian dish of chicken stewed in a pomegranate and walnut sauce. As they do in Iran, serve Khoresht Fesenjaan with white rice.

This Passover tradition is one of my favourite soups, good year round. I always double the recipe for the matzoh balls, since everyone enjoys them so much. You may wish to cook the matzoh balls in slightly salted water, allow them to cool for several minutes and then transfer them to the soup. Some people say that the matzoh balls make the broth a bit cloudy.

This is a delicious combination of red peppers, tomato sauce and minced chicken layered with matzah. Seasoned with plenty of fresh basil it is a tasty treat. In addition, for those who have nut allergies this is nut free!

A lot of oil will come to the top of the dish. Don't worry, this is normal - it is the oil from the walnuts. Most supermarkets carry pomegranate juice, or you can find the syrup in Middle Eastern shops.

Ras El Hanout is a Moroccan classic spice blend with a curry like flavour. This is a great dish to make for guests because the fragrance of the chicken as it's cooking permeates the whole house and smells amazing. Serve it with rice or couscous.

This dish was created the day after we had had a party and had lots of food left over, in particular a big pot of salsa! It's very quick and easy to make and we now make or buy salsa just to make this dish.

This is my family's favourite. I don't get away without doing it once a week. I call this recipe "oriental", but it makes no pretension to be authentically anything. The pickled peppers in it come from the Polish food shelf in the supermarket. If they're not available, 1-2 fresh peppers can be used instead, added at the same time as the chilli, garlic and ginger.

This is a fabulous use for left over roast chicken; quick and easy to make + very refreshing to eat! The ingredient amounts are general and based on personal preference more than anything
