A recipe I made by myself. Delicious, but you'll need a day to stay at home to make this ice cream - no machine needed except a freezer.

I adored black forest gateaux in the 70s and loved trifle so decided I would fuse the two. You can make it all from scratch but also easy to substitute ready made goods if you don't have the inclination. The ingredients are split to enable you to decide at each 'layer'.

This is pure heaven - well I think so anyway! It's sweet, melts in your mouth but is not chewy. This version is flavoured with chocolate and it makes a great gift. I always make some for my daughter's teachers at Christmas.

This is a cake that my gran use to make for Christmas. Sadly she is no longer with us, but we now make it ourselves; even my brother makes this at Christmas. It is not very healthy but it's Christmas anyway.

Daft name, I know. I asked my granny (a retired chef) what they actually were and she said they were a kind of truffle (the choccy sweet, not the fungus). I looked up truffles and they are made from cream, sugar and grated chocolate. They are NOTHING like these. I guess Granny was bluffing. So I am going to stick to the daft name above until someone has a better suggestion.

This is one of the best chocolate mousses I've ever tried. I personally make the mousse without any alcohol added. Garnish with whipped cream and chocolate shavings for an extra special effect.

Keep this unbelievably easy recipe a secret, never revealing that the silky, rich dessert of dark and white chocolate was created in minutes, not hours. Dark chocolate with 70 per cent cocoa solids will give the dessert the best flavour. Delicious!
