This dish melts in your mouth. The credit goes to my future mother-in-law. Not only does it taste gorgeous, but halibut is a sustainably sourced fish. Each halibut fillet should be approximately an inch thick. Substitute crème fraîche for the double cream for a lighter dish.

A classic Scottish breakfast dish of smoked haddock (haddie), traditionally Finnan haddock, and bacon (ham). This recipe is lighter than the original, cooked with only a little butter and some half-fat crème fraîche.

Whether you are planning a simple family meal or an elegant dinner party, this fresh-tasting smoked fish pâté makes the perfect light starter, served with slices of Granary toast. For an extra special presentation, spoon it into scooped-out lemon shells, which will also enhance the tangy lemon flavour.

Ciabatta rolls make an instant base for easy home-made pizzas. These are topped with a mixture of seafood – canned tuna, cooked prawns and squid rings – and are given an authentic Italian flavour with red pesto and mozzarella. Serve with a crisp green leaf and vegetable salad for a nutritious fast meal.

Traditional Craster kippers have firmer flesh and a far better flavour than pre-packed kipper fillets, and are worth finding for this high-protein breakfast.

This is an easy, elegant salmon dish with a yoghurt-dill sauce. It doesn't get much easier. I like it best on summer evenings. Fresh steamed asparagus or green beans go well with this.

A chowder is a classic American meal-in-a-bowl soup. The name is derived from the French word chaudière, meaning ‘stew-pot’. This delicious chowder is flavoured with lean bacon, leeks and tomatoes and thickened with potatoes, all of which provide the perfect background for tender flakes of salmon. Try it with sourdough bread.

A special version of scrambled eggs we make every year before getting on with the task of cooking Christmas dinner. Please note - I just gave the ingredient amounts for one serving but they are easily scaled to serve more.
