The ingredients for cullen skink – a traditional Scottish soup based on smoked haddock and potatoes – are here turned into an omelette. For the best flavour, use traditional smoked haddock, which is free from artificial yellow dye.

This variation on the classic egg mayonnaise uses little quail's eggs with a creamy yet light mayonnaise and yoghurt dressing. It is combined with mixed leaves, cucumber and slivers of succulent smoked salmon. All you need to accompany the dish is some brown or wholemeal bread.

A delicious traditional breakfast dish using smoked white fish, rice and eggs. It is based on the Indian dish Khichri. My family also loves this with tomato ketchup!!

An omelette immortalised by the English novelist and theatre critic Arnold Bennett, a frequent visitor to the Savoy Hotel Grill in the 1920s. This healthy, modern version uses grated cheese and low-fat mayonnaise instead of rich béchamel and hollandaise sauces.

I absolutely love frittatas; so much easier than quiche, and healthier, too. This is a very simple frittata with only three ingredients besides the egg. The flavours are bold, so you don't need to embellish it with much of anything - but do experiment and add some chopped fresh herbs if desired.

A special version of scrambled eggs we make every year before getting on with the task of cooking Christmas dinner. Please note - I just gave the ingredient amounts for one serving but they are easily scaled to serve more.

These dainty pastry parcels are traditionally made with a special pastry called malsouka and deep-fried, but baked filo pastry gives very good results and is much lower in fat. With a tomato and cucumber salad, and some fruit chutney alongside, they make a really delicious lunch.
