Most traditional recipes for crème caramel are made with a sugar-based caramel and a rich creamy custard. The fruity version here uses apple juice both for the caramel and in the custard, thus reducing the fat and sugar content and making it dairy free. Served with blackberries, or another seasonal fruit, this is a delicious treat for family or friends.

One of my favourite dishes when I head back home; it combines hard-boiled eggs with the subtle flavour of anise and the deep brown hues of black tea and soy. The cracked patterns from the broken shells make these quite attractive! I eat these sliced in quarters and chilled as a side dish, starter or snack. Recipe courtesy of Mum.

This is a traditional Italian recipe I prepared while working as a dessert chef in an Italian Restaurant in Dublin. It was a favourite amongst staff and customers and the recipe maintains the traditional egg recipe without using cream. Enjoy!
