This dish melts in your mouth. The credit goes to my future mother-in-law. Not only does it taste gorgeous, but halibut is a sustainably sourced fish. Each halibut fillet should be approximately an inch thick. Substitute crème fraîche for the double cream for a lighter dish.

Peppers, tomatoes and a touch of chilli make a zesty combination to partner tuna steaks, which are baked with a crisp topping. Tagliatelle is a good accompaniment, along with a crisp mixed salad or lightly steamed broccoli.

Swordfish has a distinctive, firm, meaty texture, but can become dry if grilled. Here it is steamed with vegetables and spicy Thai flavourings in paper parcels to ensure the flesh stays tender and succulent.

This is a light summery pasta salad that I love because the flavours go so well together. Lemon juice and a drizzle of good olive oil finish everything off nicely. It does taste best when chilled for 1 or 2 hours.

Everyone loves kebabs and these make a great family meal served with pitta bread and salad. Cook them on a barbecue in the summer.

From now on you can enjoy this delicious treat without worrying about the high fat content – the secret to golden chips is to coat them with egg white, not fat.

This is a classic from the Middle East where tahini, a nutty-flavoured sesame seed paste, is used like cream to add substance and moisture to simple dishes. Try serving with a salad of black olives, tomatoes and red onions with sprigs of basil.

Trout in foil parcels, baked with green chillies and lemon juice. An impressive presentation, and there's no washing up! Use red chillies if you prefer a little less heat.

Trout, like salmon and all other oily fish, is rich in omega-3 fatty acids. Nutritionists recommend that we eat at least two portions of protein and vitamin-rich oily fish per week.
