Most modern-day muffins should be ashamed – they're oversized, lacking in fibre, loaded with fat and packed with sugar. These tender golden muffins are bundles of whole grains that will please your heart and your palate.

Both children and adults will love these crisp, melt-in-the-mouth American-style cookies. They are a really wholesome treat, lower in fat and sugar than most bought cookies, and packed with oatmeal and raisins for extra nutrients and flavour. It’s worth making a double batch and freezing some – they’ll keep for 2 months and thaw in minutes.

This herbed pizza base is dusted with polenta for a real pizzeria touch. The large quantity allows you to freeze some of the bases for the next time you want homemade pizza.

There's no yeast in this bread, so it's good for special diets. You may also use soya milk instead of regular milk if you wish. It's a dense bread that's great when fresh from the oven. Especially with butter and honey on cold mornings!

With a little experimenting, I came up with these chewy, spicy oatmeal raisin cookies. They make your kitchen smell wonderful while they are baking. They almost remind me of Christmas because the spices smell so good.

A traditional favourite from the North Staffordshire. Delicious with butter or jam! You may grind regular oats in a blender to make your own oat flour.
