This is just like traditional Christmas pudding, but with less fat. The house smells great all day long. It's wonderful served with rum or cranberry sauce.

A Czech specialty that is delicious and easy to make. If desired, you can ice or glaze these and top with flaked almonds or other nuts. You can use apricot filling instead of the poppyseed filling. Also, if you don't have the round tins, you can bake the rings on regular baking trays (just be sure to place the seams of the rings are well sealed and placed downward on the trays).

This favourite Welsh teabread – its name means ‘speckled bread’ – is usually made with a yeast dough by bakers and by a quick-mix method at home. Soaking the dried fruit in tea makes it very juicy, and produces a moist loaf with good keeping qualities. Serve it thickly sliced and lightly spread with butter or soft cheese.

I adored black forest gateaux in the 70s and loved trifle so decided I would fuse the two. You can make it all from scratch but also easy to substitute ready made goods if you don't have the inclination. The ingredients are split to enable you to decide at each 'layer'.

This bread is made with spelt flour. Spelt is an ancient species of wheat, and spelt flour is readily available in most supermarkets.

Just pull apart the ‘bubbles’ or rolls to eat this delicious bread for brunch or as a healthy snack or accompaniment with a meal. The yeast dough is flavoured with a fresh carrot purée, and grated carrots and spring onions add more colour and crunch.
