This is a chunky cranberry sauce with apple, sultanas and spices. I suppose it's more like a chutney, but either way it's great with leftover turkey on Boxing Day.

We live in Saudi Arabia in a close-knit community full of different cultures, and our neighbours from Pakistan have become like our extended family away from home. Kokub, one of our neighbours, makes the most amazing mango chutney. A few years ago she invited me to help her. Of course, she doesn't use a recipe, so the NEXT time I went over with my scale so I could recreate her magic on my own. What an incredible experience!

The sweetness of mango, pineapple and red pepper is given a zing from fresh ginger and a kick from hot chilli. Serve this chutney with chicken or seafood for an exciting burst of flavour!

This chutney or relish is quick and easy as it uses cranberry sauce from a jar. It's a blend of spiced apple, cranberry, apricots and sultanas and is delicious with cold meats. It does taste better after it has chilled for at least 3 hours.

An excellent mango chutney for pork, turkey or lamb. Mangos are simmered with sultanas, ginger, onion, garlic and lots of spices. Makes plenty, so be prepared with sterilised jars.
