I hail from the Bicol province in the Philippines where people love to eat everything with coconut milk or chilli. I haven't experimented putting chilli into cookies yet but I've done a lot with coconut. Here's my coconut oatmeal cookies.

Both children and adults will love these crisp, melt-in-the-mouth American-style cookies. They are a really wholesome treat, lower in fat and sugar than most bought cookies, and packed with oatmeal and raisins for extra nutrients and flavour. It’s worth making a double batch and freezing some – they’ll keep for 2 months and thaw in minutes.

This recipe looks like it has a lot of ingredients, but it is all stuff a kitchen normally has. It has a nice cinnamony flavour that I adore. You can substitute chocolate chips or nuts for the sultanas.

With a little experimenting, I came up with these chewy, spicy oatmeal raisin cookies. They make your kitchen smell wonderful while they are baking. They almost remind me of Christmas because the spices smell so good.
