Here's a cosy start to a winter's day. This spicy cinnamon porridge, with its cargo of rich apricots, is sweetened with golden syrup. Best of all, it takes only minutes to prepare.

Very basic yet tasty side that goes well with roast chicken or kebabs. Any type of dried fruit can be used, such as sultanas or dried apricots, but I prefer cranberries.

I hail from the Bicol province in the Philippines where people love to eat everything with coconut milk or chilli. I haven't experimented putting chilli into cookies yet but I've done a lot with coconut. Here's my coconut oatmeal cookies.

This is a traditional Scots way with heart-friendly herring and oatmeal. Using fresh damp fish and fine oatmeal is healthier than coating the fish in a heavier mixture of flour, egg and breadcrumbs.

Hot chilli, aromatic cumin and lemon-flavoured pan-fried lamb accompany a light and fluffy couscous in this super-fast dish. It's perfect served with steamed whole green beans or small courgettes. Delicious!

Bulghur wheat makes a tasty base for a fast salad. Here it is combined with herbs, olives, some al dente vegetables and crumbly feta cheese, all tossed in a spicy dressing. Great with iceberg lettuce and chunks of sesame-seed bread. Delicious!

Quinoa is a high-protein, good for you grain; it can be substituted for couscous and makes a lovely side dish. This recipe is a crunchy, lemony, healthy dish that can be used as a side or as a light meal.
