This is a West Indian marinade that's been used for generations. It's best suited for fish and game, but I also like it on chicken and pork. Make sure you adjust the amount of chillies to your taste. Also, I sometimes replace the orange juice with marmalade for a sweeter marinade.

This is an Iranian (Persian) dish and i found the recipe in an old cookbook. It says there are Vegetarian versions so if anyone has one, please let me know!

hi hope you like my first recipe added to this website,i'm not sure exactly the timing so please add what tweeks you think is right. i made a list of all the eqipment you should need, saves people worrieing when get half way through a recipe and finding out they have forgot something, hope this helps equipment needed large bowl sharp knive green chopping board red chopping board tea spoon tablespoon frying pan food procesor (to make the bread crumbs) baking tray

An excellent hearty and warming family meal. Can be mildly mouthwatering or hot as you dare. It can also be varied ever so slightly by trying different flavoured corn chips/tortilla chips. Try zingy lime or fragrant chilli varieties to suit your own tastes. I have seen chilli lasagna recipes before but always using pasta sheets which doesn't feel very Mexican to me. Serve with a crisp cooling salad dressed with mint, cucumber, yoghurt or soured cream.

Passed down from my mum from a friend of my dad's, the late Mark Lasey. They went round for a dinner after the pub one night and all he had was mushrooms, onions, minced beef, baked beans and pasta that could have gone together as a dish. The dish was a success and we have now perfected it as a favourite family dish and have named it Laseyona after my dad's dear friend.

This is a very easy and warming stew that is perfect for the slow cooker. Easily tweaked according to your own taste and preferences. You can omit the salmon and have it as a vegetarian meal and adjust the amount of pepper depending on how hot you like it. I put this on in the morning before leaving for work and come home 9 hours later to a yummy dish! Serve with crusty bread or Jamaican sweet bread for extra authenticity.

Rather than rubbing butter over a bird before roasting, here a paste of fresh herbs and fromage frais is pushed under the skin. This keeps the roasting chicken beautifully moist as well as adding a wonderful flavour. The pan juices are used to make a simple sauce.
