I made this up one day. It takes a lot of work, but makes a lot of stew, and the leftovers just taste better and better each time you try it.

You can use fresh, raw, or cooked bones to make a meat stock, plus any lean meat scraps. Trim any fat or fatty skin from meat or bones before using for the stock.

A home-made stock beats cubes, powders and pastes from the flavour point of view and it is also salt-free, which many of the chilled stocks sold in supermarkets are not. When you use the stock in a recipe you can add salt to taste, depending on the other ingredients.

A crisp filo pastry topping makes an attractive change from the more traditional lid of puff or shortcrust on these individual pies – and it's lighter and less fatty too. Serve with generous helpings of vegetables such as freshly cooked carrots and sugarsnap peas, plus more potatoes to boost the starchy carbohydrates.

This is a rustic Spanish, spicy, mince based baked penne pasta dish which is perfect for a no-frills family supper. It has come about through trial and error in an attempt to replicate a dish that I ate in a Spanish farmhouse some 15 years ago. In our family it is simply called THE Pasta Dish. The sauce makes 5 portions and so it becomes economical and quick after you've cooked the batch of sauce.
