This is a very rich dish. Often, I find it's best served as a first course rather than a main because of the meat and cheese filling.

This Italian-style casserole is ideal for a special family dinner – it can be put in the oven well in advance, leaving time to do other things. Don't worry if you get delayed, as the lamb improves with longer cooking. Or it can be left to stand and reheated, with the macaroni added at the last minute. Serve with ciabatta.

This is a minced lamb and pasta bake tossed in pasta sauce, then covered in a white sauce and Cheddar cheese. I bake it in the oven until the cheese is brown and crispy, and then serve it with a salad!

Chunks of lean lamb are gently simmered with dates in a richly spiced gravy, then piled atop couscous and pistachio nuts, and sprinkled with pomegranate seeds. Serve this exotic dish for a special family meal or a make-ahead dish for entertaining, accompanied by some Arabic flat bread and a simple leafy green salad.

This is a rustic Spanish, spicy, mince based baked penne pasta dish which is perfect for a no-frills family supper. It has come about through trial and error in an attempt to replicate a dish that I ate in a Spanish farmhouse some 15 years ago. In our family it is simply called THE Pasta Dish. The sauce makes 5 portions and so it becomes economical and quick after you've cooked the batch of sauce.
