For this tasty dish, tender lamb fillet is quickly cooked under the grill, then cut up and mixed into a salad of bulghur wheat, red pepper, green olives and fresh mint. No oil is used to dress the salad, just fresh lemon and orange juices, so the fat content is kept healthily low.

Minced meat is excellent value, very versatile and universally popular. It is used here in a quick Indian-style curry. serve with warm naan or chapattis and thick, creamy yoghurt.

Like Irish stew and Lancashire hotpot, this hearty dish is made with good-quality lamb, plus lots of vegetables, pearl barley, and bay leaves and thyme for flavouring. It is simple to make, and comes out of the oven smelling and tasting absolutely wonderful. Serve with purple sprouting broccoli or curly kale and baked potatoes.

This is a delicious meal that is so flavourful. You won't believe it's only 5 main ingredients. You can eat it on it's own but I like to serve it with mashed potatoes to soak up the delicious sauce. Set aside some of the fresh mint for garnishing.

Based on a classic French dish called navarin, this is a delectable stew. In France it is made in spring, as a celebration of the new season's lamb and the delicate young vegetables. Serve with a dish of freshly cooked spring greens, and hand round a basket of crusty French bread.
