This dish melts in your mouth. The credit goes to my future mother-in-law. Not only does it taste gorgeous, but halibut is a sustainably sourced fish. Each halibut fillet should be approximately an inch thick. Substitute crème fraîche for the double cream for a lighter dish.

This is a light summery pasta salad that I love because the flavours go so well together. Lemon juice and a drizzle of good olive oil finish everything off nicely. It does taste best when chilled for 1 or 2 hours.

In true American style, this club sandwich is piled high, and packs in lots of interesting flavours and textures. Parma ham, fried until crisp, replaces the usual bacon, and mashed avocado the butter. Adding a few leaves to a sandwich is a cunning way to get children to eat their greens.

This delicious galette, made with brown rice, crunchy stir-fried vegetables, chestnuts, fresh sage and cheese, is a cross between a roasted rice cake and a risotto. Serve with a simple salad and cranberry sauce.

When you are hungry and in a hurry this simple pasta dish can be on the table in next to no time. You will even be able to put together a salad accompaniment and still be sitting down to eat within 20 minutes. Take care when melting the cheese to ensure that it does not get too hot.

This is an easy, authentic dish that appeals to a wide range of tastes. The combination of ingredients may appear unusual, but even those shy to experiment with new flavours love this one. Vegan friendly!

Not only are low-fat lentils richer in protein than most other pulses, but their slightly smoky flavour makes a great base for this tasty nut roast, packed with colourful vegetables and served with a quick tomato sauce.

Even though there's loads of roasting and puréeing to do, it's worth the effort. A delicious and healthy vegan dish.

When I lived in Mexico this was one of my favourite dishes. Toasted sesame seeds and blanched almonds are puréed and cooked with chillies, olives and capers.

Oven-roasted vegetables, tender and scented with garlic, make a chunky dressing that is great with wide pasta noodles. A sprinkling of crunchy sunflower seeds adds texture as well as additional nutritional benefits.

Fresh and fruity, this casserole comes from northwestern France, where cider apples grow in profusion. A dish of rice is cooked in the oven at the same time, making this a very simple meal to prepare. Serve with generous helpings of green vegetables, such as French beans or mange-tout.

This is the comforting version of carbonara I grew up eating. Serve it piping hot tossed with extra Parmesan cheese and chopped fresh parsley.

This rich dish is great for an ultra-easy special dinner, any day of the week. Lightly crushed peppercorns give the steak a piquant flavour that complements the toasted pecan nuts. Serve with garlic mash. Delicious!
