An autumnal salad to make the most of the squash season. Dorset Blue Vinney adds good, sharp flavour but is lower in fat than most cheeses, making this a healthy dish all round.

This delicious galette, made with brown rice, crunchy stir-fried vegetables, chestnuts, fresh sage and cheese, is a cross between a roasted rice cake and a risotto. Serve with a simple salad and cranberry sauce.

When you are hungry and in a hurry this simple pasta dish can be on the table in next to no time. You will even be able to put together a salad accompaniment and still be sitting down to eat within 20 minutes. Take care when melting the cheese to ensure that it does not get too hot.

I found this recipe in magazine ages ago and have been using it fairly frequently since. You can shape the pasties into a man in the moon shape or alternatively cut a circle to make a pasty shape. Absolutely delicious and very moreish especially eaten outside with a glass of mulled wine.

This crunchy, colourful winter salad provides an excellent nutritional mix. The vegetables and apples are rich in vitamin C and fibre, Edam cheese adds protein and calcium, and walnuts contain essential fatty acids. Serve with oatcakes, if liked.

A summery cheese salad, this has been devised with a nod towards the Mediterranean. The salty tang of creamy feta cheese is contrasted with bright pink and orange fruit, luscious and full of sweet flavour. A mix of salad leaves adds a slightly peppery taste, and toasted seeds give crunch.
