This is a big hit with the kids as its easy to make and involves very little work. It can be made with or without mushrooms depending on your taste. My mum made it up when i was a kid and I cook it for mine now.

This is a light summery pasta salad that I love because the flavours go so well together. Lemon juice and a drizzle of good olive oil finish everything off nicely. It does taste best when chilled for 1 or 2 hours.

This is a lighter version of pasta carbonara. For people who want the flavour but not the bacon, smoked salmon is the perfect substitute!

I've made this tuna pasta bake with light soured cream and light mayonnaise with equally good results. At home, I serve it with a salad a quick dinner.

For the best flavour, add the vinaigrette to the pasta while still hot, then serve warm. However, you can also prepare the salad ahead to serve cold, if you have time.

This tastes best with fresh tuna but if you like the idea - feel free to try it with tins of good quality tuna. It's very filling but makes a lovely summery pasta dish for parties.

Marinated herrings are an excellent standby ingredient as an alternative to canned fish – there are many bottled varieties that keep well in the fridge for 2–3 months. They are delicious in this Scandinavian-inspired dish, which combines them with hot pasta and crunchy red onion. Serve rye bread as an accompaniment.

Easy to make and tastes good too. Perfect for the nights when you come home late from work. Also very good reheated.

A whole fish cooked with ginger, garlic and spring onions is a traditional centrepiece in a Chinese meal. Here it is served with a mixture of noodles and bean sprouts to make a very special dish.

This is a great casual dinner party dish garnished with freshly grated Pecorino cheese and chopped parsley. Arrabbiata literally means "angry" in Italian, a nod to the spicy kick in this dish.

This updated version of the classic tuna casserole is made special with mushrooms, garlic and herb soft cheese, broccoli and petits pois. Great way to make the kids eat their veggies!

This is a lovely seafood pasta dish made with red wine, cream and garlic. It tastes stunning and is really simple to make.

I made this dish for my partner and she keeps asking for more! There's no asian grocery where I live so I sort of tweaked the original recipe by using white wine instead of sake. Note: you can add carrots, cauliflower or any vegetable you wish to add.

Fresh scallops are cooked with garlic, onion and white wine, then tossed with linguine. Serve with a sprinkling of Pecorino and fresh parsley.
