Very easy and tasty meal made with bacon and pine nuts, finished with fresh tarragon and lemon juice. My husband loves it!

This is just a brilliant easy toimato sauce which can be adapted a zillion ways to serve with pasta. I grow my own tomatoes and usually make this with a mix of differents types. I had a glut this year and have loads of this in the freezer to remind me of summer.

Serve this salad warm or cool as a main dish for 4, or as a main course accompaniment for 6. Either way, it is a flavoursome low-fat vegetarian dish that has real meal appeal. Saffron, which brings the taste and colour of the Middle East to the couscous, is readily available from larger supermarkets.

Crisp, stir-fried sugarsnap peas make a fresh contrast with soft noodles and rich, roasted duck served with a quick-and-easy sauce of honey, soy sauce and lime juice. Delicious!
