Made from thinly sliced pork fillet, fresh ginger, spring onions and Chinese noodles. It is quick and easy to prepare, and makes a great first course for a dinner party.

When our children were little my friend gave me this recipe which hides vegetables in the sauce; my children still love it as teenagers. It freezes very well so I am never without a quick meal to hand. It can be used on its own over pasta or with the addition of single cream makes a luxurious soup. A vegetarian version can be made without the bacon.

A Spanish-style bean soup that's packed with flavour. Andouille is a spicy, heavily smoked pork sausage that is often associated with Cajun cooking. If you can't find Andouille, try fresh chorizo or a spicy Italian sausage.

Bigos is a traditional Polish stew using pork, kielbasa and sauerkraut. Great for a cold winter day. Well worth the time it takes to make it!

A traditional French cassoulet would take several hours to cook, but you can make this shortcut version using canned beans and succulent, quick-browned duck breasts, then leave it to bubble on the hob. Serve with crusty garlic bread and steamed Savoy cabbage.

Best use I have ever found for left over ham! Be sure to save the ham's juices and chill them so you can remove the fat, leaving behind the delicious juices to flavour the soup stock.

This is a delicious recipe for ham and potato soup that a friend gave to me. It is very easy and the great thing about it is that you can add additional ingredients, more ham, potatoes, etc and it still turns out great.

Peas and ham are perfect partners and make classic comfort food. Here they are brought snappily up to date with a swirl of soft cheese and a little nutmeg. Serve with soda bread or toasted wholegrain ‘soldiers’. Delicious!

This is a good way to use leftover ham, quite inexpensive and very tasty. Some people like to add diced carrots or potatoes. However you tweak this recipe, it will indeed become a warming winter staple.

A hint of cream makes this fresh green soup seem delightfully indulgent. The high proportion of peas fills the soup with vitamins and fibre, while a modest amount of lean cooked ham adds protein and depth of flavour. Serve with crusty bread for a satisfying starter or add a sandwich and enjoy it for lunch.

This is a wonderfully simple chunky soup. The dark green colour of the cabbage alongside the tomatoes gives the soup a beautiful colour.
