I started making this dish a few years ago after apple picking with my children. I was looking for something different to do with some of the apples and this turned out to be delicious! We all enjoy it and hope your family does too.

In this colourful salad, the subtle flavour of spinach is enhanced by sweet melon and citrus, and Parma ham adds a savoury touch. You can prepare the dressing in advance, but only assemble the salad at the last moment to preserve as much vitamin C as possible. Serve with French or Italian bread as a light main dish.

Luscious ripe figs go so well with lean Parma ham, and make an elegant little starter salad. In this delectable version, the vitamin content is boosted with the addition of green beans and bulb fennel, plus some fresh pineapple for an unexpected touch of tangy sweetness.

Broaden your children's tea repertoire with this healthy version of a long-time favourite. Gammon steaks are quickly grilled, then topped with naturally sweet pineapple and glazed with mild mango chutney. Rice and mixed vegetables complete the meal, and a yummy orange sauce is drizzled over all.

This classic, easy summer recipe features juicy cantaloupe and salty Italian prosciutto ham. Just cut the cantaloupe into bite-size pieces, wrap them with good quality prosciutto and spear them on cocktail sticks for a colourful starter!

Fresh and fruity, this casserole comes from northwestern France, where cider apples grow in profusion. A dish of rice is cooked in the oven at the same time, making this a very simple meal to prepare. Serve with generous helpings of green vegetables, such as French beans or mange-tout.

Any type of blue cheese pairs well with apples and pork. Try to use Gorgonzola as this makes a richer, creamier sauce.

Pork has an undeserved reputation for being fatty. Modern breeding and butchery techniques mean that many cuts are now extremely lean.

Pork medallions are served with a rich port and cranberry sauce. Delicious with mash or a wild rice pilaf. Great for a dinner party around Christmastime.

This recipe came from my mum. It takes little time since it requires basting, but the end result is worth it. Makes a truly delicious meal served with mashed potatoes and green vegetables.

A deceptively simple summer dish! Use fresh ripe or tinned peaches and serve with rice.

We found this a lovely alternative to the sausage option and the port makes it really special! It is best to marinate the apricots in the port over night for the best flavour. Can be prepared up to two days in advance and chilled once apricots are rolled in bacon. We also served just the apricots in port at the table for our vegetarian friends.
