Brown rice, with its nutty taste, takes well to robust additions like wild mushrooms and sun-dried tomatoes. Add some well-flavoured vegetarian cheese too, and a little will go a long way.

Beetroot risotto topped with halloumi cheese and boiled eggs. I was inspired to cook this after being served beetroot risotto in a very expensive restaurant and being terribly disappointed. So I made it how it should have been made! Preparation time is only 5 minutes as you do most of it whilst you're cooking the rice!

This recipe is based on a traditional Caribbean favourite. It's made with black-eyed beans or red kidney beans, which are called peas in Jamaica – hence the name of the dish. Red pepper has been added for extra vegetable content and a small amount of lean, smoked bacon lifts the flavour.
