In this attractive salad, full-flavoured shiitake and chestnut mushrooms are combined with slices of tender griddled duck, juicy orange segments, crunchy water chestnuts and rice, with a fresh ginger and honey dressing. Duck meat is in fact very lean, once the thick layer of fat and skin has been removed.

This simple salad is a favourite of my daughters & whenever made will simply disappear from the fridge before I get to serve it! Quick & easy to prepare & useful to use up odds and ends of salad ingredients.

This is a very tasty brown rice recipe salad. Mmm!! Very different and tasty served with barbecue meats. I don't think this need to be changed at all, it is so perfect the way it is.
