This is a hearty soup with a lot of texture. It is perfect in winter with a roaring fire and some crusty bread. You can really change the taste of the soup depending on what kind of chicken you use. Poached chicken yields a good flavour, whereas roast chicken offers a more complex taste.

I took a look around the site for a recipe like this, and not having found one, I decided to have a go creating one. My family really enjoy it. You can adjust the heat to your own preference. You could also omit the chicken for a nutritious vegetarian option. I think it's pretty versatile. It would be delicious served with tortilla chips, guacamole and a fresh green salad. Hope you like it!

Cooked chicken, makes a healthy meal in minutes if you add rice and a little imagination. Perk it up with pistachios, crisp carrot, zesty orange and punchy chives. Delicious!
