The spicy tomato flavour and aroma of this easy-going rice dish make it really appealing. Tender monkfish, juicy prawns and plenty of vegetables all combine to make a well-balanced, complete meal.

Laying a piece of fish on a bed of greens, seasoning with a few aromatics and then sealing up tightly into a parcel is a simple and trouble-free way to cook fish. It's healthy too, as no water-soluble nutrients are lost.

A traditional fish dish from Russia, this is made with poached salmon, rice and mushrooms. The updated version here uses crisp filo rather than the usual puff pastry. As all the preparation can be done ahead of time, a koulibiac is an ideal dinner party dish. All it needs with it are some colourful steamed vegetables.

Japanese food tends to be low in fat, and these stylish sushi rolls are no exception. Now that the ingredients are available in supermarkets, it is easy to make them yourself. You must use sushi rice, which is sticky when cooked.

Undyed smoked haddock is the basis of a classic kedgeree, given a twist with extra spice and the distinctive taste of coriander. A salad of peppery rocket, watercress, spring onions and radishes is just right on the side. Delicious!

A very traditional paella with chorizo, chicken, peas, squid, mussels and prawns. The saffron and chorizo give this one-pan meal a gorgeous red hue. A paella pan is recommended.
