Make the most of aromatic, golden apricots when they're in season by using them in this attractive tart. It has a sweet orange shortcrust base and is topped with a crumbled flapjack-style mixture of oats, sultanas, hazelnuts and seeds. Marinating is the key to success for these tender, juicy and sweet-tasting kebabs. Just half an hour will add delicious flavours to the lamb, although overnight is better if you have time. Serve with a leafy mixed salad, and a bowl of plain low-fat yogurt mixed with grated cucumber and chopped fresh mint and flat-leaf parsley.

I don't usually like 'baking' with the microwave, but this recipe works great. The topping comes out crispy on top, moist inside - simply delicious! It's a dessert that's quick and easy to make, too. Best served warm with vanilla ice cream or natural yogurt.
