An absolutely delicious starter. To freeze: Freeze canapes uncovered until solid. Wrap well and return to freezer. Reheat at 200 C / Gas 6 until heated through.

You have to try these to believe how good they taste. The luscious filling is so quick and easy, and the tender courgette and crisp cucumber salad, with its spiky chilli and lime seasoning, is a perfect accompaniment. Delicious!

These Oriental-style, triangular parcels of crisp, light filo pastry enclose a ginger-flavoured filling of crab, water chestnuts and sweetcorn. They look and taste wonderful, and are really easy to make. Prepare them ahead for a party, then bake just before serving with a sweet chilli dipping sauce.

As my husband and I are trying to eat more healthily these days, i have adapted a basic quiche recipe and replaced some of the ingredients with lower fat ingredients - it's just as tasty as the original, but better for you!

Here is an impressive filo pastry dish for entertaining. The filling is made with couscous, coloured golden with saffron, prawns, tomatoes, peas, spring onions and coriander. Rocket leaves add a contrasting, fresh green layer through the centre. Serve hot or cold for a special meal for 6, or as the centrepiece of a buffet for 8.

English goat's cheese, especially the fresh variety, has a beautiful, mild flavour that complements the prawns.
