This veggie burger is an alternative to eating its beefy cousin. It's high in fibre and actually tastes delicious.

I love the braised tofu served at Chinese restaurants, but at home I like to make it healthier (without the deep frying). In my version, I use a lot of vegetables to make it more filling. This dish is good on its own or with rice.

Shiitake mushrooms, ginger and a stock made with dried kombu seaweed bring rich savoury flavours to this Oriental broth, which is quick and easy to make. With delicate tofu and slightly peppery watercress, the resulting soup is ideal for a deliciously healthy first course before a stir-fry of mixed vegetables with noodles.

This is an authentic recipe from Korea that's eaten with rice and other side dishes. It includes tofu, courgette, mushrooms and onions. Garnish with sliced spring onions. You might have to go to an Asian shop to buy some of the ingredients.

This is an authentic comforting, cure-all soup from Korea. It is spicy and fresh, and easy to make once you have all the ingredients! You will have to visit your local Asian shop for some of the ingredients. Vegetarians may substitute vegetable stock for the beef.

Mapo tofu is a popular Chinese dish which is said to be originated from the Szechuan province. It is a combination of tofu (bean curd) and minced meat, usually pork or beef, in a spicy chilli- and bean-based sauce, typically a thin, oily and bright red suspension. Somehow, the Cantonese have adapted the mapo tofu in our own way and the spiciness is well accepted by most people.

This dish can be made with prawns, chicken or pork instead of tofu. Look for the more exotic items in the international foods section at your local supermarket. Adjust the pad Thai sauce ingredients to taste.
