I love the braised tofu served at Chinese restaurants, but at home I like to make it healthier (without the deep frying). In my version, I use a lot of vegetables to make it more filling. This dish is good on its own or with rice.

Brown rice tossed with crisp vegetables and fresh and dried fruit makes this unusual side salad. The almost fat-free dressing is based on tofu, a curd made from soya beans, which gives it a grainy texture similar to the delicious Greek dip, hummus. For a smoother mayonnaise-like texture, use silken tofu.

Dashi is a basic stock used in Japanese cooking which is made by boiling dried kelp (seaweed) and dried bonito (fish flakes). Instant dashi granules are sold in conveniently sized jars or sachets and vary in strength. Add more dashi to your soup if you want a stronger stock. You can use yellow, white or red miso paste for this soup. Yellow miso is sweet and creamy, red miso is stronger and saltier.
