Made with minced turkey, these burgers are generous in flavour and lean on fat, for a satisfying dinner that's quick to make and a great favourite with children. Serve in muffins, baps or ciabatta rolls.

For a smart meal in the minimum of time, stuff turkey breasts with rich, creamy blue Brie and add a flavour kick of lively ginger and sweet apple. Serve with new potatoes and stir-fried cabbage with walnuts. Delicious!

Much better than a standard turkey sandwich on boxing day. This a beast of a sandwich one for the boys, not a very lady like sandwich to eat. It can be an art to stack this sandwich but it looks and tastes great.

This is a simple recipe. After making them the first time my husband said 'no more' to beef burgers. These are really good - any cooking method may be used, and they freeze very well.

Minced turkey makes a tasty and healthy burger. It's even better with feta cheese and olives. Serve these delicious Greek-inspired burgers with sun-blush tomatoes and baby greens in pitta bread.

Around the Mediterranean, a ‘sandwich’ of cold meat and salad vegetables packed into a hollowed-out bread loaf was traditionally carried into the fields by workers, to provide a protein-packed carbohydrate-rich snack at lunchtime. These are an all-American favourite. As the name suggests, they have a messy appearance – a bolognese mixture served between wholemeal rolls – but it's a recipe all the family will love, and it can be prepared ahead. Lean minced turkey is used here as a lower-fat alternative to minced beef, but you could use either.
