Around the Mediterranean, a ‘sandwich’ of cold meat and salad vegetables packed into a hollowed-out bread loaf was traditionally carried into the fields by workers, to provide a protein-packed carbohydrate-rich snack at lunchtime. This up-to-date version uses low-fat turkey, moistened with fragrant basil pesto.

These are an all-American favourite. As the name suggests, they have a messy appearance – a bolognese mixture served between wholemeal rolls – but it's a recipe all the family will love, and it can be prepared ahead. Lean minced turkey is used here as a lower-fat alternative to minced beef, but you could use either.

Sweet peppers and warm spices flavour this family-style chilli, made with minced turkey rather than the traditional beef for a lower fat content, and served on spaghetti to boost the carbohydrate value. It is an ideal cook-ahead dish as the flavour of the sauce improves if it is made a day in advance and reheated.

An interesting and spicy solution to the leftover turkey dilemma on Boxing Day. Leftover turkey is cooked with tomatoes and green chillies, spiced with cayenne and cumin and finished off with fresh avocado and coriander for a zesty, unique soup.

This is a recipe I made up one CHristmas to use up leftover turkey in an original way, with lots of vegetables to give a hearty and warming feel to the meal without the heaviness of too many calories. The great thing is it can be assembled ahead and reheated when needed, these quantities serve 6 adults, but can easily be altered to accomodate more.

This is a lovely crunchy salad for winter, full of contrasting tastes and tossed with an unusual dressing made from cranberry sauce and walnut oil. Red cabbage makes an interesting base, but does tend to stain the other ingredients, so serve the salad as soon as everything has been mixed together.

When you roast a turkey, don't throw away the carcass. Instead, use it to make this wonderfully rich-tasting soup. Reminiscent of an Italian minestrone, it is packed with vegetables, barley, turkey meat and chestnuts – a really satisfying bowl of soup. Serve with warm, crusty wholemeal bread.

This warming dish appeals to children and adults alike, so it makes an ideal family meal. It is a good example of an everyday dish in which vegetables, pasta and breadcrumbs extend a modest portion of a protein food, which, being turkey, means the dish is low in fat too. Serve with a salad, and a fruity pudding to follow.
